Vegetable & Bacon Orzo

This is a wonderfully simple orzo dish. Orzo is a small Italian pasta and it even looks a little like rice. It is made from wheat semolina, however it was originally made from barley, in fact Orzo means barley in Italian. It is easy to prepare and has a summer flavor to it, a welcome pick me up from the winter months.


  • 4 rashers of bacon
  • 1/2 red onion chopped
  • 4 cloves of garlic
  • 1/2 red pepper
  • one zucchini diced
  • Italian herbs as desired (we stock an Italian herb blend)
  • 2 tomatoes chopped
  • one cup orzo
  • olive oil
  • one medium eggplant chopped
  • one small triangle of laughing cow cheese or an equivalent


  1. cook the bacon and keep aside
  2. saute the onion and garlic in olive oil for 5 minutes then add the vegetables and herbs
  3. add the tomatoes and simmer for 10 min, then add the bacon
  4. boil the orzo till al dente then mix with laughing cow cheese or any soft cheese
  5. then add the bacon and vegetables.
