Smoked (and deep fried) Mac and Cheese

The title of this recipe is not a typo.

Though I did just typo “typo” 3 times before I got it right. Slow fingers this morning. We are getting ready to enjoy a nice, lengthy end of summer weekend and I am already gone in my mind.

But I digress. It is hard to believe that summer came and went so fast. I can’t complain too much tho because I LOVE me some cool autumn days and all the feel-good tummy filling dishes that come with it.

Like Mac and Cheese.

I am not a HUGE fan of it when the days are over 90 degrees. It is a little too gooey and creamy and filling (yet delicious!) when all I really want is ice cold beer. (Who doesn’t?)

But we got lucky last week when the night-time temps dipped down to the 40’s and all I could think about was feel good food. I about begged for it.

Jeff delivered with this dish. I almost hated him afterwards it was so good. I mean come on SMOKED Mac and Cheese??

When he deep fried it the next day I wanted to kick his butt. Because I wanted to eat the whole thing. Which might have given me a heart attack. Definitely would have given me a heart attack.

Life is so unfair.

So you can stick to just smoking this dish and serving. Or smoking it and refrigerating it overnight and then deep frying the next day. Or make a quadruple batch and do both!

If you hide in the closet and eat the whole thing we promise not to judge.

Smoked (and deep fried) Mac and Cheese

Ingredients:

  • 3 cups of shredded cheese (we used pepperjack)
  • 1.5 cups of whole milk
  • .5 cup flour
  • 8 Tablespoons butter
  • 1 cup of heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried mustard
  • 1/4-1/2 teaspoon cayenne
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1# of macaroni (cooked and cooled)

Steps to success:

In a large pot over medium heat melt the butter and add in the flour. Stir for a couple minutes until it is golden brown.

Add in the cream and milk. Add in the cheese a handful of time and stir until melted. Repeat until all cheese is done and the mixture has melted

Once all the cheese has been melted add in the garlic, onion, cayenne, mustard, pepper, and salt. Add in the macaroni and stir to combine.

Pour into a 9×9 pan, get your smoker at 225-250, and throw it on.

Let it go for 2 hours without stirring. Notice the bonus ring bologna? MMmmmm.

When it is done, sprinkle breadcrumbs and paprika over the top and broil for 5-7 minutes.

But if you really love your friends you will invite them over the next day and do it right. You will deep fry that Mac and Cheese!

 

Once the mac and cheese is done, remove it from the smoker and put in the fridge to chill overnight.

The next day slice it into bars. Our were 2″ x 3″.

Take three bowls. Bowl one put some flour in, bowl 2 beat up 2 eggs, and bowl 3 put in either panko or breadcrumbs.

(Do you notice the step by step photos stopped at this point? 350 degree oil scares us. 😉  )

Cover the bars with flour, then with eggs, and then with breadcrumbs.

Place it into a 350 degree fryer for 6-8 minutes. Make sure you tumble the mac and cheese a few times in the oil with a slotted spoon to get even browning on all sides.

Remove with slotted spoon and allow to drain on a plate with paper towels.

Serve.
