Quick Roasted Herbaceous Shrimp

517711709This super simple and quick recipe will wow your party guests and family members alike! This healthy take on shrimp ends up tasting like you used a stick of butter! Serve as an appetizer with cocktail sauce or as your main entree with some vegetable sides.

1 lb medium shrimp, peeled and deveined
2 T olive oil
4 cloves garlic, minced
1/2 t dried oregano
1/2 t dried basil
1/4 c freshly grated Parmesan cheese
Kosher salt and freshly ground black pepper, to taste
Juice of 1 lemon

Preheat oven to 400 degrees F. Coat a baking sheet with nonstick spray. Place shrimp in a single layer onto the baking sheet. Add olive oil, garlic, oregano, basil, and Parmesan cheese. Season with salt and pepper. Gently toss to combine. Place into oven and roast just until pink, firm, and cooked through (about 6-8 minutes.) Squeeze lemon halves over top and stir. Serve immediately.
