Smoked Sausage

Whatever the reason you’re busy, you can make this meal work for you! By cutting each of the main ingredients into chunks, adding spices and oil, and throwing onto a baking sheet, this baked sausage dinner is simple, cheap, and delicious!

  • 1 lb package smoked sausage
  • 4-5 Yukon Gold potatoes (scrubbed)
  • 1 small jar sliced banana peppers
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large sweet onion
  • 4 tbsp extra virgin olive oil
  • coarse salt
  • black pepper
  • Italian seasoning

Spray a large lipped baking sheet with nonstick spray. Slice sausage into rounds on the bias (1/2 inch thick). Cut potatoes, onion, and peppers into 1/2 inch chunks. Place cut ingredients into large mixing bowl. Drizzle olive oil over ingredients. Mix to coat. Sprinkle salt, pepper, and italian seasoning and mix with your hands making sure all chunks are covered. Pour onto baking sheet. Top with sliced banana peppers (as many as you’d like). Bake at 400 degrees for about 35 minutes or until the potatoes are tender.

Remember, this is more or less a baseline for your ideas.  Feel free to add more vegetables or remove some of these vegetables if they aren’t in your inventory.  Get creative and see what you can whip up!  If you find you have found an awesome dish by adding some more ingredients, please feel free to share your recipe or some pictures with us.

Enjoy your baked sausage meal!
