Homemade healthier chicken nuggets

Baked chicken nuggetsIf you are wondering more and more what is in those fast food chicken nuggets, then this recipe is for you! These healthier baked nuggets were a hit for my whole family and are the perfect freezer food, too, for quick lunches for the kiddos.







1 lb boneless, skinless chicken breasts, cut into 1 inch pieces

1 T potato buds

1/3 c cold water

1 t garlic salt

1/8 t black pepper

3/4 c finely crushed corn flakes (crush 2 1/2 cups of cereal for this and I used food processor)

1/4 c grated parmesan cheese


In a shallow bowl, mix crushed corn flakes and parmesan cheese. In food processor, combine chicken pieces, potato flakes, water, garlic salt, and pepper. Wet your hands, then form 1 tablespoon size nuggets. Roll the nuggets in the crumb mixture. Place nuggets onto lightly oil sprayed baking sheet. Bake for 15 minutes, flipping nuggets over with tongs half way through. Enjoy with your favorite dipping sauce!
