Hearty Potato Soup

Are you ready for the perfect fall soup that will stick to your ribs? Try this delicious potato soup recipe the whole family will love!







4 slices thin bacon, cut into 2-inch pieces

3 carrots, diced

3 ribs celery, diced

1 medium onion, diced

10 red potatoes diced

1/2 t Cajun seasoning

salt and pepper

8 c chicken broth

1 c milk

3 T all-purpose flour

1/2 c heavy cream

1 c shredded cheddar cheese


Add the bacon pieces to a dutch oven or large soup pot over medium heat and cook until crisp. Remove the bacon from the pot and set aside on paper towel lined plate. Pour off most of the grease but don’t wipe the pot clean.

Return the pot to medium-high heat. Add carrots, celery, and onions. Stir and cook for about 2 minutes then add the potatoes. Cook for 5 minutes, add Cajun spice, salt, and pepper. Pour in the broth and bring to a gentle boil. Cook util the potatoes start to get tender, about 10 minutes. Whisk together milk and flour then pour the mixture into the soup. Cook soup for another 5 minutes.
Use an immersion blender to smooth soup to your desired consistency. Stir in the cream. Serve in bowls with shredded cheese and bacon (if desired) to garnish. Enjoy!
