Healthy chicken salad with a flair

516729177Love creamy chicken salad, but don’t want all the fat and calories from the mayonnaise and egg? We’ve got the solution! In this recipe, the avocado acts as the thickening agent and pulls all of these fresh, delicious ingredients together.

2 grilled chicken breasts, cooled and chopped
2 avocados, chopped into large pieces
5 stems of fresh cilantro
1 t cumin
1/2 t sea salt
1/2 t fresh cracked pepper
1 chopped roma tomato
1/4 c finely chopped red onion
juice from 1/2 squeezed lime

Mix all ingredients together. Top with crumbled queso fresco. Serve on small soft tortillas or use as a dip with tortilla chips.
