Banana Cranberry Pound Cake

Two things that always have a tendency to reside in my freezer, besides bacon, is bananas and cranberries.

Bananas because I buy a bunch, eat one and go oh crap they are turning brown, I will just pop them in the freezer for use later.

And cranberries because after the end of the year, they are nearly impossible to find.

Needless to say when I opened my freezer last week I found I could probably be accused of being a banana and cranberry hoarder.

So to rectify that situation, I decided to bake.

I have been told that this is a crazy loaded recipe and I know I probably over loaded it with banana and cranberries but hey its healthy!

Banana Cranberry Pound Cake

1/2 cup butter, softened
1/3 cup brown sugar
1/3 cup white sugar (If you like a sweeter cake feel free to up this to 1/2 cup)
2 eggs, beaten
2 1/2 cups mashed super ripe bananas
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon vanilla
2 cups frozen cranberries (oops almost forgot these…)
Preheat oven to 350°.

Grease your loaf pan(s).

In a large bowl, cream together butter and sugars. Stir in eggs and mashed bananas and beat till well blended.

Combine your flour, baking soda and salt in another bowl and slowly add to banana mixture until well combined. Add vanilla. Then fold in your cranberries.

Pour your batter into the prepared loaf pan(s). Bake in preheated oven for 60 minutes for full pans, 45 for mini loaf pans, or until a toothpick inserted into center comes out clean. Let bread cool in pan for about 10 minutes then turn it out onto a wire rack to cool completely.

Dust with powdered sugar for serving is desired.
