Baked Oatmeal Cups

image (11)These grab and go baked oatmeal cups are perfect for a busy family! Freeze a large batch and thaw when you need one. Quick, easy, and delicious!








1 egg

1 t vanilla extract

1 c applesauce

1 banana, mashed

1/4 c honey

2 1/2 c old fashioned rolled oats

1 T ground cinnamon

1 1/2 t baking powder

1/2 t salt

1 1/4 c milk


Preheat oven to 350 degrees. Mix egg, vanilla, applesauce, banana, and honey together in a large mixing bowl. Add in oats, cinnamon, baking powder, salt and mix well with wet ingredients. Pour in milk and combine. Spray cooking spray in a 12 cup muffin tin or in small bakeware cups. Divide mixture into cups with a 1/4 c measuring cup. If you like to add in any toppings (blueberries, nuts, chocolate chips, etc.), do so as the last step. Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze (wrap in plastic wrap then put in freezer bag.) To enjoy frozen cups, place in fridge night before to thaw, microwave for 45 seconds, then stir in a little milk.
