Baked Mahi Mahi Tacos

Posted by

mahitacosWe’ve been trying to get more seafood in our diet and with great prices on bulk freezer fish at our nearby store, we couldn’t resist creating these delicious baked Mahi Mahi Tacos with lime crema!

2 fillets of Mahi Mahi

1 teaspoon garlic powder

1 teaspoon paprika

1/2 of a lime

pinch of salt

pinch of pepper

1 cup panko crumbs

Tortillas of your choosing (we used small flour tortillas)

1/4 c sour cream

2 T mayonnaise

Other optional toppings of your choice: salsa, avocado, guacamole, shredded lettuce, etc.

Preheat oven to 400 degrees. Cut Mahi Mahi into bite sized pieces and place in a bowl. Add the garlic powder, paprika, salt, and pepper. Mix together with your hands to get spice coverage on all pieces of fish. Let that sit while the oven preheats.

Once the oven is up to 400 degrees, pour panko onto a cookie sheet and toast in the oven until lightly browned. (Keep an eye on these as they can burn quickly!) Remove the panko and let cool for a bit. Take the fish and coat each piece with breadcrumbs, pressing them into each piece. Place the fish on an oil sprayed cookie sheet. Bake the fish for 12 minutes or until cooked through.

For the lime crema, combine the sour cream, mayo, and juice of half of a lime and some salt and pepper in a small bowl. Whisk until blended. Assemble the tacos and top with crema and any other toppings you desire!
