Lemon Poppy Seed Muffins

Lemon Poppy Seed Muffins from the Great American Spice CompanyWhen our family gets together for the holidays, we live far enough apart that whoever is hosting all of us has overnight guests. That means in addition to preparing a big meal later in the day, we are making breakfast for a crowd as well.

Lemon Poppy Seed Muffins are fast and easy to prepare, but they still add a special touch to the breakfast table, and help get the day off to a great start.  I love this recipe because it makes a nice light muffin that is intensely lemon-y, and not terribly sweet.

Poppy seeds may be tiny, but they bring a lot to the party, in terms of both a subtle flavor and a lovely little crunchy “pop”! Our 5 ounce stovetop size is enough to make about 8 batches of these muffins.

2/3 cup granulated sugar
1/3 soft butter
2 eggs
1 cup, plus 2 tablespoons well shaken buttermilk
Juice and zest of 1 1/2   large lemons
2 1/2 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons Great American Spice Company Poppy Seeds

I just use a hand mixer for these, but a stand mixer will work nicely too, especially if you are doubling the recipe because you have a crowd to feed.
Preheat the oven to 350º
Cream together the sugar and butter, and then beat in the eggs until fluffy.
Add the buttermilk, lemon juice and zest, and mix well, scraping down the sides of the bowl, as needed.
In a separate bowl, whisk together the flour, baking powder, salt and poppy seeds.
Fold the dry mixture into the butter mixture, taking care not to over-mix which will make the muffins tough with big air holes.
Divide between 12 muffin cups, either lined with paper liners or very well buttered.
Bake for 17 to 20 minutes, until a toothpick inserted near the center of a muffin comes out clean.   Remove pan to a rack – cool in the pan for about 5 minutes before removing – it makes the papers come off more easily.  You can make a glaze, as I did, with 1 cup of confectionery 10X sugar, a little of the lemon zest and a couple teaspoons of lemon juice.  Just dip the tops of these warm lemon poppy seed muffins in the glaze. Sprinkling a few more poppy seeds on top lets everyone know what awaits them when they take a bite.  Serve warm with plenty of butter and maybe some strawberry jam.
