Chicken Tortilla Soup Recipe

A hearty soup like this Chicken Tortilla Soup Recipe makes for a wonderful meal. It combines spice with texture to create a fiesta in your mouth! This soup also freezes very well and if you’re like us, you had a lot leftover. This will be perfect to re-heat when you’re in a time crunch!

Yield: 6-8 servings

Ingredients:

Soup:

  • 1/4 c extra virgin olive oil
  • 4 T unsalted butter
  • 2 medium yellow onions, roughly chopped
  • 4 cloves garlic, coarsely chopped
  • 1 green bell pepper, deseeded and roughly chopped
  • 5 6-inch corn tortillas, cut into small pieces
  • 2 t chili powder
  • 1 T ground cumin
  • 8 c chicken stock (we use low sodium variety)
  • 1 1/2 t sea salt
  • 1/8 t cayenne pepper
  • 3 c rotisserie chicken, diced
  • Garnish:
  • Crushed tortilla chips
  • Sour cream
  • Handful chopped fresh cilantro
  • 2 avocados, diced
  • Lime

Instructions:

Heat olive oil and butter in large pot over medium heat. Add onions, garlic, and green pepper and cook until tender and just starting to brown (about 10-15 minutes). Stir occasionally.

Add cut tortillas, chili powder and cumin. Continue to cook, stirring occasionally, a few minutes more. Add chicken stock, salt, and cayenne pepper and bring to a boil. Turn heat down to low and simmer for about 20 minutes.

Remove the soup from the heat and puree using an immersion blender until completely smooth. If you don’t own an immersion blender, you can puree batches in your regular blender. Stir in chicken, then ladle soup into bowls and garnish.  This chicken tortilla soup recipe goes well with a couple of chicken taco’s and a margarita or two 😉 !!
