Bacon Wrapped Shrimp Diablo

There are few things that make peoples mouth water like grilled shrimp.

Wrap bacon around those shrimp and you may have a riot on your hands if you don’t have enough for everyone. That is never a problem at our house. We are used to cooking for a crowd and we love it. But when we made these we kinda cut it close.

It was looking like a battle to the death for the last one.

So while everyone was deciding who had the most shrimp and who deserved the last one, I just ate it.

It’s nice being the cook.

This is a simple recipe but I would be lying if I said it wasn’t messy as hell to assemble.

Worth it.

Bacon Wrapped Shrimp Diablo

  • 1 # U19 shrimp, deshelled, deveined and butterflied.

  • A good habanero cheddar cut into thin strips the length of the shrimp
  • Thin center cut bacon (if you like bacon, do not click here for beer cured bacon)

After you have deshelled, deveined and butterflied the shrimp, Place in a large bowl.

Combine  the lime powder thru the pepper and dump on the shrimp,tossing well to coat evenly. Let sit for 30 minutes.

To assemble, take a strip of cheese and lay it along the center of the shrimp. Close the shrimp around the cheese and wrap with a slice of bacon. Set aside and repeat with the rest of the shrimp.

 

Grill over medium heat for 15 minutes till the bacon has crisped up and the shrimp is translucent. No longer then necessary.

Eat as many bacon wrapped shrimp as you like before you serve them or you may not get any.
